I didn't realize exactly how BIG 8.5qt dutch oven would be and it turns out that my burner is smaller in diameter than the dutch oven. That being said, I get a little bit of uneven heating and takes a while to heat up. I made Mexican rice in my new dutch oven and it worked really well when I put it in the oven. I had some Mexican rice 'crust' on the pot which was really good and it took a little bit of work to scrape it off. Overall I really like it; it's huge, well made, heavy, and really good for the price.

I use the 8 1/2 quart Dutch oven to prepare one-dish meals for a crowd. I use the matching 5 1/2 quart Dutch oven for just family. They're great for Swiss Steak, Pot Roast, Corned Beef and Cabbage, or any other oven-cooked one-dish recipe.
